Almond - Hazelnut Bread

After many unsuccessful attempts , this one was one that actually works for me . It had a nice crust and the bread is light and moist unlike my other attempts that were heavy and dry. 


I have modified it a bit from a recipe I originally found on the net.

Here is my modified version :

1 cup almond flour
1 cup hazelnut flour 
1-2 tsp honey (optional )
2 tbsp almond butter
2 tbsp hazelnut butter 
3 eggs
1/2 tsp baking soda
1/2 tsp baking powder
A pinch of salt
A handful of nuts ( I used walnut and sunflower seeds )
1/2 tsp Vanilla essence (optional )
Olive oil ( optional if you like the taste )


Beat the eggs .
Add honey and vanilla.
Add the nut butters.
Add olive oil 
Mix well.

Seperately, 
Mix the almond and hazelnut flour.
Add the baking powder, salt and baking soda to the flour mixture . 
Add the nuts.

Mix the flour mixture to the eggs.
Pour into a mould lined wit wax paper .

Bake at ard 170 degree C for ard 20 min. Check in once at the 15 min mark to ensure things are on track . The bread is done when a knife comes out cleanly.

Let it cool and eat.


Update on 6/11/2014

I have been experimenting with this quite a bit. Have added flaxseed meal to the mix . For more flavor I have been adding caraway seeds, olives , sundried tomatoes etc . Been having fun with this bread basically .
