Pork roast with a sauce made of apple cider vinegar

This is a very simple Jamie Oliver recipe. Will post the link below . He used balsamic vinegar , but as I was in my 21DSD I used apple cider vinegar . 

Method : 
Remove the skin from the pork .
Scour the skin and the meat.
Rub it down with a mix of chopped rosemary and thyme, salt and olive oil. Pour half a cup of Apple cider vinegar over the meat .
Heat a pan and sear the skin and meat .
Preheat the oven. 
Add the meat to the baking dish and keep chopped garlic heads and the Rosemary and thyme around it.
Bake at 180 degree C for 60 -70 min. 
Optional Cracking is made by keeping the skin on a wire rack over the meat . So the fat will drip on the meat . Yummy !! 

Let the roast cool.
The sauce can be made by reducing the drippings with some more Apple cider vinegar 




Here is my roast with a salad of lettuce leaves and home made mayo.
